Ok, I admit it, technically this isn't in a bowl BUT I wanted to add a side of veggies so I opted for a plate. But feel free to make this an put it in a bowl. :)
This turkey bowl recipe is seriously one of my favorites - I make it all the time. It's quick, easy, budget friendly, AND delicious! With ground turkey and black beans, this dish packs a protein punch, leaving you full and satisfied (with plenty of leftovers!).
{Ingredients}:
-Rice:
- 1 cup brown rice
- 2 cups water
- 1 (14.5 oz) can of diced tomatoes
-Turkey filling:
-1 lb lean ground turkey (I use 93% lean)
-1 (15 oz) can of black beans
-1/2 cup frozen corn
-1 bell pepper (I used green, use whatever color you like best!)
-1/2 red onion
-1 jalapeno (use more or less depending on how spicy you like it!)
-1/2 avocado
-1/2 lime
-1/4 cup reduced fat cheese
-2-3 tbsp cilantro
-Vegetables:
-2 stalks broccoli
-1 package snap peas (about 1 cup)

Directions:
-Preheat oven to 400 degrees for roasted vegetables.
Rice:
-Start with the rice because it will take the most time to cook.
-Fill a pot with 2 cups of water and bring to boil. Add 1 tbsp olive oil and 1 tsp salt.
-Add 1 cup of rice to the water and reduce heat with lid on.
-Simmer until water reduces (about 20 minutes) and add the can of tomatoes, plus 1tsp cumin and chipotle pepper powder.
-Mix and continue cooking until it thickens (another 20-25 minutes).
-Add 1 tbsp cilantro and 1/4 squeezed lime to finish.
-Veggies:
-Cut broccoli into small pieces, place on baking sheet with snap peas.
-Drizzle with 1-2 tsp olive oil
-Season with 1 tsp garlic powder and red pepper flakes (more or less depending on your preferences)
-Place in 400 degree oven for about 10-15 minutes, flipping halfway
Turkey:
-Dice the onion, bell pepper, and jalapeno and sautee with 1 tsp olive oil in a skillet pan on medium heat for about 5 minutes.
-Rinse and drain the beans, then add to the mixture.
-Add in frozen corn.
-Add the ground turkey and break into small pieces with wooden spoon.
-Season with 1 tsp of: cumin, paprika, chili powder, chipotle pepper powder, garlic powder, salt, and pepper.
-Cook for another 5-10 minutes, until turkey is cooked through.
-Top with cheese, cilantro, lime, greek yogurt, and avocado!
